- 125ml dry white wine
- 250ml heavy cream
- 50g grated Parmesan cheese
- 30g fresh spinach
- Salt and pepper
Instructions
- Pat the salmon fillets dry and season with salt and pepper. Heat olive oil and butter in a skillet over medium-high heat. Sear the salmon skin-side up until golden brown (about 6-7 minutes). Remove salmon from the skillet and set aside.
- In the same skillet, add minced garlic and sun-dried tomatoes, sautéing for about 30 seconds on low heat. Deglaze with white wine, simmering until reduced by half (about 5 minutes).
- Stir in heavy cream and grated Parmesan cheese until combined. Add fresh spinach and return the salmon to the pan. Let everything simmer over low heat for about 5 minutes or until heated through.
