  • 4 oz sun-dried tomatoes (chopped)
  • 14 oz artichoke hearts (drained and chopped)
  • 4 oz fresh spinach
  • 1 cup heavy cream
  • Smoked paprika, Italian seasoning, salt, and black pepper

Instructions

  1. Gather all ingredients; chop sun-dried tomatoes and artichokes, and mince garlic.
  2. Toss shrimp with smoked paprika, Italian seasoning, salt, and black pepper in a bowl.
  3. Heat olive oil in a skillet over medium heat; sauté garlic and sun-dried tomatoes until fragrant (about 2 minutes).
  4. Add seasoned shrimp to the skillet; cook for 3–4 minutes on each side until pink and opaque. Remove from skillet.
  5. In the same skillet, add artichokes and spinach; stir until spinach wilts (about 2–3 minutes).
  6. Pour in heavy cream and smoked paprika; simmer gently until slightly thickened.
  7. Return shrimp to the skillet; mix gently to combine. Adjust seasoning if needed.
