  • 2 ½ teaspoons instant espresso powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 170g (1 cup) white chocolate chips

Instructions

  1. Brown the butter in a medium saucepan for about 3–4 minutes until nutty. Allow it to cool.
  2. Preheat the oven to 350°F (180°C) and line a cookie sheet with parchment paper.
  3. In a bowl, whisk together flour, espresso powder, cinnamon, salt, baking powder, and baking soda. Set aside.
  4. In another bowl, mix cooled brown butter with sugars, egg, and vanilla until combined.
  5. Stir the dry ingredients into the wet mixture until just combined; fold in white chocolate chips.
  6. Roll dough into balls (about 1½ tablespoons each) and space them on the prepared cookie sheet.
