  • 200g udon noodles
  • 100g shrimp (810 pieces)
  • 1 garlic clove (minced)
  • 1 yellow onion (sliced)
  • 120g white mushrooms (sliced)
  • 1 carrot (matchstick cut)
  • Spring onion (chopped, green & white separated)
  • Soy sauce
  • Oyster sauce
  • Sesame oil
  • Brown sugar

Instructions

  1. Boil udon noodles as per package instructions. Drain, rinse under cold water, and toss with oil.
  2. In a wok or large pan, heat oil over high heat. Sauté garlic until fragrant, then add mushrooms and cook until tender. Add onions and carrots; stir-fry for 2-3 minutes before removing from the pan.
  3. Add more oil to the pan and fry shrimp until pink. Stir in soy sauce.
  4. Combine noodles with shrimp in the pan; stir-fry on high heat until slightly crispy.
  5. Mix in your prepared sauce and sautéed vegetables until well combined.
  6. Garnish with chopped spring onions before serving.
