- 1 cup orzo pasta
- 4 oz crumbled feta cheese
- 3 tbsp extra virgin olive oil
- 3 garlic cloves (minced)
- 2 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Rinse chicken breasts under cold water and pat dry; season with salt and pepper.
- Cook orzo in salted boiling water according to package instructions until al dente (8-10 minutes); drain well.
- In an oven-safe skillet over medium heat, add 2 tbsp olive oil. Sear chicken breasts for 3-4 minutes on each side until golden brown.
- In a small bowl, mix minced garlic, lemon juice, oregano, salt, pepper, and remaining olive oil; pour over chicken.
- Sprinkle feta cheese on top of the chicken and transfer the skillet to the oven. Bake for about 20 minutes or until the internal temperature reaches 165°F (74°C).
- Stir cooked orzo into the skillet with all juices; toss gently to combine before serving.
