  • 1 lb large shrimp (peeled and deveined)
  • 2 cups cooked rice (white or brown)
  • 1 ripe avocado (diced)
  • 1/2 cup cherry tomatoes (halved)
  • 1/4 cup red onion (thinly sliced)
  • 1/2 cup sour cream or Greek yogurt
  • 2 tbsp lime juice
  • Fresh cilantro
  • 1 tbsp olive oil
  • 1 tsp chili powder

Instructions

  2. Heat a skillet over medium-high heat and cook the shrimp for 2–3 minutes per side until pink and opaque. Remove from heat.
  3. Whisk together sour cream, chopped cilantro, lime juice, water, salt, and pepper in a bowl until smooth; chill.
  4. Assemble the bowls by dividing rice among four bowls. Top with shrimp, avocado, cherry tomatoes, red onion, and cilantro.
  5. Drizzle each bowl with cilantro lime sauce before serving.
