  • 1/2 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tablespoon pure maple syrup
  • 1 and 1/2 teaspoons vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Prepare the zucchini by lightly blotting it to remove excess moisture.
  2. In a bowl, whisk together oats, flour, baking soda, salt, and cinnamon.
  3. Cream softened butter with brown and granulated sugars until fluffy. Add the egg, maple syrup, and vanilla; mix well.
  4. Combine dry ingredients with wet ingredients and fold in the zucchini and chocolate chips.
  5. Chill dough in the refrigerator for at least 2 hours.
  6. Preheat oven to 350°F (177°C). Scoop dough onto prepared baking sheets.
  7. Bake for 13–14 minutes or until edges are lightly browned.
