  • 1/2 cup water
  • 1 tbsp apple cider vinegar
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries (hulled and quartered)
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • Turbinado sugar (optional, for topping)

Instructions

  1. To prepare the crust, combine cold butter, flour, and salt in a mixing bowl until crumbly. Add water and vinegar gradually until dough holds together. Shape into a disk, wrap in plastic wrap, and refrigerate for at least an hour.
  2. In a saucepan over medium heat, melt the cold unsalted butter until golden brown and fragrant. Set aside to cool slightly.
  3. In another bowl, mix sliced peaches and strawberries with sugar, cornstarch, lemon juice, and salt until well combined.
  4. Preheat oven to 375°F (190°C). Roll out half of the chilled dough into a circle and place it in a pie dish. Fill with fruit mixture evenly.
  5. Roll out remaining dough for the top layer; crimp edges or cut slits for ventilation.
  6. Optionally sprinkle Turbinado sugar on top and bake for about 70 minutes until the crust is golden and filling is bubbly.
