Ingredients
- 2 ribeye or New York strip steaks (1.5 inches thick)
- 2 tbsp olive oil (plus more for cooking)
- Salt and black pepper
- 1 cup fresh parsley (chopped)
- 3 garlic cloves (minced)
- 2 tbsp fresh oregano (chopped) or 1 tbsp dried oregano
- 1/2 cup extra virgin olive oil
- 2 tbsp red wine vinegar
- 1/2 tsp red pepper flakes
Instructions
- Bring steaks to room temperature by removing them from the fridge 30-45 minutes prior to cooking.
- Combine parsley, garlic, oregano, olive oil, vinegar, red pepper flakes, salt, and black pepper in a medium bowl for chimichurri. Let it sit for at least 10 minutes.
- Pat the steaks dry and season generously with salt and black pepper on both sides.
- Heat a cast-iron skillet or grill pan over high heat for 3-5 minutes until very hot. Add olive oil.
- Sear the steaks without moving them for 3-4 minutes on one side until browned. Flip and cook for another 3-4 minutes for medium-rare.
- Allow steaks to rest under foil for 5-10 minutes before slicing against the grain and serving with chimichurri sauce.
