  • 34 boneless, skinless chicken breasts
  • 1 cup cooked quinoa
  • 2 cups chopped fresh broccoli
  • 8 oz cream cheese
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup low-sodium chicken broth
  • 1 tsp garlic powder

Instructions

  1. Preheat oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. In a skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper and cook until browned on both sides (6-7 minutes per side). Let cool and chop into bite-sized pieces.
  3. Steam chopped broccoli until tender-crisp (about 5 minutes), then drain excess water.
  4. In a large bowl, mix quinoa, chicken, broccoli, cream cheese, garlic powder, and half the shredded cheese until well combined.
  5. Spread mixture in the prepared baking dish and pour chicken broth over the top. Sprinkle remaining shredded cheese.
