  • 1 lb fresh large shrimp, peeled and deveined
  • 4 cups mixed greens (arugula, spinach, romaine)
  • 1 cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • Juice of 1 lemon
  • 1 tbsp Dijon mustard

Instructions

  1. Boil salted water in a pot. Add shrimp and cook until pink and opaque (about 3 minutes). Drain and cool.
  2. Wash and chop mixed greens, cucumbers, cherry tomatoes, and red onion.
  3. Whisk olive oil, lemon juice, Dijon mustard, salt, and pepper in a small bowl until smooth.
