- 6 oz blackberries (pureed)
- 5 tbsp sugar
- 2 1/2 tsp cornstarch
- 3/4 cup graham cracker crumbs
- 2 tbsp sugar
- 3 tbsp butter (melted)
- 12 oz cream cheese (room temperature)
- 1/2 cup sugar
- 1 1/2 tbsp flour
- 1/4 cup sour cream
- 2 tsp lavender extract
- 1/2 tsp vanilla extract
- 2 large eggs (room temperature)
- Violet gel icing color (optional)
- 1/2 cup heavy whipping cream (cold)
- 4 tbsp powdered sugar
- 1/2 tsp vanilla extract
- 12–14 blackberries (for garnish)
Instructions
- Preheat the oven to 325°F (162°C). Line a cupcake pan with liners.
- In a food processor, puree blackberries until smooth and strain.
- Combine graham cracker crumbs, sugar, and melted butter to form the crust; bake for 5 minutes.
- Mix cream cheese, sugar, flour, sour cream, lavender extract, vanilla extract, and eggs until smooth.
- Pour the filling into the crusts and bake at 300°F (148°C) for 18-20 minutes.
- Cool in the oven before chilling in the refrigerator.
