  • 2 1/2 tsp cornstarch
  • 3/4 cup graham cracker crumbs
  • 2 tbsp sugar
  • 3 tbsp butter (melted)
  • 12 oz cream cheese (room temperature)
  • 1/2 cup sugar
  • 1 1/2 tbsp flour
  • 1/4 cup sour cream
  • 2 tsp lavender extract
  • 1/2 tsp vanilla extract
  • 2 large eggs (room temperature)
  • Violet gel icing color (optional)
  • 1/2 cup heavy whipping cream (cold)
  • 4 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • 1214 blackberries (for garnish)

Instructions

  1. Preheat the oven to 325°F (162°C). Line a cupcake pan with liners.
  2. In a food processor, puree blackberries until smooth and strain.
  3. Combine graham cracker crumbs, sugar, and melted butter to form the crust; bake for 5 minutes.
  4. Mix cream cheese, sugar, flour, sour cream, lavender extract, vanilla extract, and eggs until smooth.
  5. Pour the filling into the crusts and bake at 300°F (148°C) for 18-20 minutes.
  6. Cool in the oven before chilling in the refrigerator.
