How to Make Mini Blackberry Lavender Cheesecakes

Step 1: Make the Blackberry Topping

  1. To make the blackberry topping, add the berries to a food processor and puree until smooth. You should end up with a little more than 1/2 cup of puree.
  2. Combine the berry puree, sugar, and cornstarch in a medium saucepan. Cook over medium-low heat, stirring consistently until mixture thickens and comes to a boil, about 5 minutes.
  3. Allow to boil for 45 seconds to 1 minute, then remove from heat. Pour into another bowl and refrigerate until cool.

Step 2: Prepare the Crust

  1. Preheat oven to 325°F (162°C). Line cupcake pan with cupcake liners and spray with non-stick spray.
  2. Combine graham cracker crumbs, sugar, and melted butter until well combined. Divide mixture between the cupcake liners (about 1 1/2 tablespoons per cup) and press into bottoms.
  3. Bake crusts for 5 minutes then remove from oven. Allow to cool while preparing filling.

Step 3: Make the Cheesecake Filling

  1. Reduce oven temperature to 300°F (148°C). In a large bowl, mix cream cheese, sugar, and flour until combined using low speed on an electric mixer.
  2. Add sour cream, lavender extract, and vanilla extract; beat on low speed until well combined.
  3. Add eggs one at a time while beating slowly; scrape down sides of bowl after each addition.
  4. If desired, add violet gel icing color and gently fold to combine.

Step 4: Assemble and Bake

  1. Divide cheesecake batter between cups in pan until mostly full.
  2. Bake cheesecakes for 18-20 minutes; turn off oven but keep door closed for another 10 minutes.
  3. Crack oven door slightly allowing cheesecakes to cool for 15-20 minutes before transferring them to fridge.

Step 5: Finish Up

  1. When cheesecakes are cool and firm, remove from pan.
  2. Spoon blackberry filling onto tops of cheesecakes evenly.
  3. To make whipped cream, whip heavy whipping cream with powdered sugar and vanilla extract on high speed until stiff peaks form.
  4. Gently fold in gel icing color if desired; pipe whipped cream onto tops of cheesecakes and garnish each with a fresh blackberry.

Enjoy your delightful Mini Blackberry Lavender Cheesecakes!

How to Perfect Mini Blackberry Lavender Cheesecakes

Achieving the perfect Mini Blackberry Lavender Cheesecakes is all about attention to detail. Here are some tips to ensure your cheesecakes turn out delicious every time.

  • Chill the ingredients: Start with room temperature cream cheese and eggs to ensure smooth mixing and prevent lumps.
  • Monitor baking time: Keep an eye on baking times; overbaking can lead to cracks in your cheesecakes. They should be set but slightly jiggly in the center.
  • Use quality ingredients: Opt for high-quality blackberries and lavender extract for the best flavor experience.
  • Cool gradually: After baking, let cheesecakes cool slowly in the oven to help prevent cracking due to rapid temperature changes.
  • Experiment with toppings: Feel free to try different toppings, such as whipped cream or flavored syrups, to add your personal touch.

Best Side Dishes for Mini Blackberry Lavender Cheesecakes

Pairing side dishes with your Mini Blackberry Lavender Cheesecakes can enhance the overall dining experience. Here are some great options:

  1. Fresh Fruit Salad: A mix of seasonal fruits provides a refreshing contrast to the rich flavor of the cheesecakes.
  2. Lightly Sweetened Whipped Cream: This classic pairing adds creaminess and complements the flavors beautifully.
  3. Lavender Lemonade: A citrusy drink infused with lavender echoes the flavors in your dessert while keeping things light and refreshing.
  4. Chocolate-Dipped Strawberries: These sweet treats are easy to prepare and add an elegant touch alongside your cheesecakes.
  5. Cheese Board: A selection of cheeses pairs well with dessert, offering savory bites that balance out sweetness.
  6. Shortbread Cookies: These buttery cookies provide a crunchy texture that contrasts nicely with the creamy cheesecakes.
  7. Herbal Iced Tea: A chilled herbal tea can cleanse the palate between bites and heighten the experience.

Common Mistakes to Avoid

Making Mini Blackberry Lavender Cheesecakes can be a delightful experience, but there are common pitfalls to watch out for.

  • Ignoring ingredient temperatures: Ensure that your cream cheese and eggs are at room temperature. This helps achieve a smooth filling without lumps.
  • Overmixing the batter: When combining ingredients, mix just until combined. Overmixing can introduce too much air, leading to cracks in your cheesecakes.
  • Skipping the cooling steps: Allowing the cheesecakes to cool gradually in the oven helps prevent cracking. Don’t rush this process!
  • Not using a water bath: For an extra layer of protection against cracking, consider placing your cheesecake pan in a larger pan filled with hot water during baking.
  • Using fresh blackberries directly: Always puree and strain your blackberries for the topping. This ensures a smooth and flavorful sauce rather than chunks of fruit.
