Ingredients

Scale
  • 1 ½ lbs fresh peaches (about 3 cups chopped)
  • 1 ½ cups all-purpose flour
  • 4 oz cream cheese
  • 12 tbsp unsalted butter
  • 1 ½ cups granulated sugar
  • 4 large eggs
  • Almond extract

Instructions

  1. Preheat your oven to 325°F. Grease and line a 9×5-inch loaf pan with parchment paper.
  2. Prepare the peaches by tossing them with lemon juice, sugar, cornstarch, melted butter, vanilla extract, and almond extract.
  3. Make the crumble by mixing sugars, salt, and flour together before incorporating cold butter until crumbly.
  4. Beat cream cheese until smooth; gradually add room temperature butter and sugar until fluffy. Mix in eggs one at a time along with extracts.
  5. Combine dry ingredients; fold into the wet mixture and gently incorporate the prepared peaches.
  6. Layer half of the batter in the pan, sprinkle with half of the crumble, add remaining batter, then top with the rest of the crumble.
  7. Bake for about 90 minutes or until golden brown and a toothpick comes out clean.
